Happy Thanksgiving!

With the holidays coming up, we thought we’d stray away from our usual blog posts, and share a recipe to get us in the mood.

This savory gravy recipe came straight from our friends at Guild Mortgage, and will be sure to delight even the pickiest of eaters. But don’t worry, you won’t have to scroll through our life story to get to the good stuff. The recipe is below!

You’ll need:

  • potato skins/potato water (from when you boil them for your other side dishes, of course)

  • butter (delicious)

  • garlic (measure with your heart)

  • shallots (like onions, but better)

  • portobello mushrooms (kennett square has the best)

  • sherry wine (cheap)

  • turkey drippings (can’t say we know of a substitute for this)

  • fresh herbs (we like rosemary, thyme and oregano)

  • black pepper (lil zing)

  • salt (every good recipe has salt. if it doesn’t, it’s a lie)

Fess, the gravy master at Stancato Mortgage Group in Exton, shares this:

“Reserve your potato water from your potato prep. If you can, add skins to the pot. If you don’t do potatoes, you can leave now. You did this to yourself.

In a wide saucepan or sautee pan, melt butter and sweat your garlic and shallots until translucent under medium-low heat. Add and brown your sliced portobollo mushrooms until their moisture is nearly gone. Deglaze the pan with sherry wine. The cheaper the better. If you accidentally bought good sherry, that’s okay. Take it outside, and trade a homeless man for his. That’s the stuff you want and you’ll make a friend. You should have a nice thick fond on the bottom at this point.

Add your turkey drippings and potato water to the pan. Hike the heat until just under a simmer. Stir a long time whenever you remember to do it (about an hour total) and let it reduce. The potato water will thicken it without having to add cornstarch or anything.

As you reduce your gravy consistency, finish with fresh rosemary, thyme, oregano, and freshly cracked black pepper to taste. As a dollop of clotted cream, if ya nasty”
